Tomato, Avocado & Basil Chickpea Toast

Ingredients:

4 slices of sourdough or multigrain bread, toasted

1 ripe avocado, mashed

1 cup canned chickpeas, drained & rinsed

½ cup cherry tomatoes, halved

2 tbsp red onion, finely chopped

1 tbsp lemon juice

Salt & black pepper, to taste

1 tbsp olive oil

Fresh basil leaves, torn

Optional: chili flakes or balsamic glaze for topping

Directions:

Chickpea Smash:
In a bowl, mash chickpeas roughly with a fork. Stir in red onion, lemon juice, olive oil, salt, and pepper.

Toast & Layer:
Spread mashed avocado on toasted bread slices. Spoon the chickpea mixture on top.

Top It Off:
Add halved cherry tomatoes and fresh basil. Sprinkle chili flakes or drizzle balsamic glaze if using.

Serve:
Enjoy immediately while the toast is still crisp.
