BLUEBERRY MAPLE BREAKFAST SAUSAGE

This recipe is adapted from Jacky Francois, executive chef at the Omni Mount Washington Resort. It’s a customer favorite served at the resort’s legendary brunch.

INGREDIENTS:
1 pound ground pork
1 teaspoon kosher salt
1 tablespoon frozen blueberries
1 medium garlic clove, minced
½ teaspoon ground black pepper
2 tablespoons ice water (or fresh New Hampshire snow)
2 tablespoons maple syrup

INSTRUCTIONS:
1. In a large mixing bowl, combine the ground pork, salt, blueberries, minced garlic, and black pepper, distributing the seasonings.
2. Add the water and maple syrup to the mixture. Stir until the liquid is incorporated and the mixture has developed a sticky, uniform appearance.
3. Shape the mixture into eight evenly sized patties.
4. Refrigerate or freeze the patties in plastic wrap until ready to cook.
5. In a skillet over medium heat, gently sauté the patties until they reach an internal temperature of 150 degrees Fahrenheit, approximately 10 to 12 minutes.
