For the Lemon Rice: 1 cup cooked brown or jasmine rice ½ cup chickpeas, drained and rinsed ½ cup cherry tomatoes, halved ½ cup fresh spinach, chopped ¼ cup feta cheese, crumbled 1 tbsp fresh parsley, chopped 1 tbsp fresh dill, chopped Juice of ½ lemon ½ tsp red pepper flakes (optional)
Instructions 1. Prepare the Chicken: In a bowl, mix olive oil, oregano, garlic powder, salt, black pepper, and lemon juice. Coat the chicken in the marinade and let it sit for 15 minutes. 2. Cook the Chicken: Heat a pan over medium heat and cook the chicken for 5–6 minutes per side until golden brown and fully cooked. Let it rest before slicing. 3. Prepare the Rice Mixture: In the same pan, sauté chickpeas, cherry tomatoes, and spinach for 2–3 minutes. Add cooked rice and mix well. 4.
