Recipe:
Ingredients:
- 400g firm tofu
- 1 cup breadcrumbs
- 1/2 cup plain flour
- 1/2 cup plant-based milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1/4 cup olive oil (for frying)
- Fresh parsley, chopped (for garnish)
Gravy:
- 2 tablespoons olive oil
- 2 tablespoons plain flour
- 2 cups vegetable stock
- 1 tablespoon soy sauce
- Salt and pepper, to taste
Mashed Potatoes:
- 4 large potatoes, peeled and cubed
- 1/4 cup plant-based milk
- 2 tablespoons vegan butter
- Salt and pepper, to taste
Method:
1. Press the tofu to remove excess water, then cut into thick schnitzel style slices.
2. In a bowl, mix the flour, garlic powder, onion powder, salt, and pepper. In another bowl, pour the plant-based milk. In a third bowl, place the breadcrumbs.
3. Dredge each tofu slice in the flour mixture, then dip into the plant-based milk, and finally coat with breadcrumbs.
4. Heat olive oil in a frying pan over medium heat. Fry the tofu slices until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
5. For the gravy, heat olive oil in a saucepan over medium heat. Stir in the flour and cook for 1-2 minutes. Gradually whisk in the vegetable stock and soy sauce. Cook, stirring constantly, until thickened. Season with salt and pepper.
6. For the mashed potatoes, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add plant-based milk and vegan butter. Mash until smooth. Season with salt and pepper.
7. Serve the tofu schnitzel hot, topped with gravy and a side of mashed potatoes. Garnish with fresh parsley.
