Vegan Tempeh Sandwich
Recipe:
Ingredients:
200g tempeh, sliced
2 tbsp soy sauce or tamari
1 tbsp maple syrup
1 tbsp olive oil
4 slices of whole grain bread
1 ripe avocado, mashed
1 tomato, sliced
A handful of fresh sprouts or lettuce
Salt and pepper to taste
Instructions:
Marinate the Tempeh:
In a shallow dish, whisk together the soy sauce and maple syrup.
Add the tempeh slices and coat them well with the marinade.
Let it sit for at least 15 minutes, or longer for more flavor.
Cook the Tempeh:
Heat the olive oil in a pan over medium heat.
Add the marinated tempeh slices and cook for about 3-4 minutes on each side, until they are golden brown and crispy.
Assemble the Sandwich:
Toast the bread slices if desired.
Spread the mashed avocado on two slices of bread.
Place the cooked tempeh on top of the avocado.
Add the tomato slices and a handful of sprouts or lettuce.
Season with salt and pepper.
Top with the remaining slices of bread.
Serve:
Cut the sandwiches in half and serve immediately.
