SWEET & SOUR TOFU SALAD
Recipe
🔹Pineapple Dressing
🔸1/3 cup pineapple juice
🔸¼ cup lemon juice
🔸1 tbsp vegan mayonnaise
🔸2 tsp raw cane sugar/sweetener or to taste
🔸1 tsp Dijon mustard
🔸1/8 tsp smoked paprika
🔸3 garlic cloves (minced)
🔸½ tsp toasted black sesame seeds
🔸½ tsp toasted golden sesame seeds
🔸½ tsp salt or to taste
🔸½ tsp black pepper or to taste
▪️Steps: Whisk together until well combined. Adjust salt, black pepper & sugar to taste.
🔹Tofu Salad
🔸12 red cherry tomatoes (sliced into halves)
🔸12 orange cherry tomatoes (sliced into halves)
🔸1 English cucumber (deseeded, diced)
🔸15 oz. canned pineapple chunks (diced to smaller chunks if preferred)
🔸14 oz. organic firm tofu (drained, pressed & cubed)
🔸2.6 oz. red onion (sliced)
▪️Steps
▫️In a skillet on medium low heat, pan fry tofu on all sides until golden brown. Turn off heat & toss pan fried tofu with ¼ tsp sea salt.
▫️In a skillet on low heat, grill onions until lightly caramelized.
▫️Once both tofu & onions have cooled, add them to a mixing bowl along with remaining salad ingredients.
▫️Add ~1/3 cup pineapple dressing to the mixing bowl. Toss until well combined. Add more dressing if desired.
